The selected grape come from 40-year-old vines that produce a maximum of 4 or 5 small, loose clusters. This is a complex wine with a balanced and harmonious palate. The grapes are meticulously selected and hand-picked. Fermentation takes place at a controlled temperature between 26-28°C to ensure optimal aromatic potential before undergoing a 10-day maceration process. This ensures the wine acquires its characteristic color and polished tannins. Finally, the wine rests for 24 months in French and American oak barrels before bottling. The bottles continue their maturation process for 3 years to guarantee complete and harmonious maturity.
